- Spinach – The best part about this recipe is that it can be made with either fresh or frozen spinach. If using frozen, thaw completely and get rid of any excess liquid.
- Cheese – I used a combination of cream cheese, parmesan cheese, and mozzarella cheese.
- Garlic – Use fresh garlic for best results.
- Sour Cream – If you’re not a fan of sour cream, feel free to use mayo instead.
- Salt and Pepper – Season generously with salt and pepper!
- Red Pepper Flakes – Adds heat but is completely optional.
HOW TO MAKE
- Preheat your oven to 375 degrees F.
- In a large skillet over medium heat, sauté the garlic until fragrant. This should take about 15 seconds.
- Add the spinach and cook until wilted, about 2-3 minutes for fresh spinach, or 5-7 minutes for frozen spinach. Drain any excess liquid from the skillet.
- In a mixing bowl, combine the cream cheese, sour cream, parmesan cheese, and mozzarella cheese.
- Add the sautéed spinach and garlic to the mixing bowl and mix until well combined.
- Season with salt, pepper, and red pepper flakes (if desired) to taste.
- Transfer the mixture to an 8×8-inch baking dish or a cast iron skillet.
- Bake for 20-25 minutes, or until the dip is hot and bubbly and the cheese is melted and golden brown on top.
- Serve the dip hot with your favorite keto-friendly crackers, veggies, or pork rinds.
