Keto Spinach Dip

This keto spinach dip is gooey, hot, and cheesy! It's low in carbs and high in flavor, making it the perfect choice for anyone looking to indulge without the guilt.

Ingredients
  

  • 10 oz spinach fresh or frozen
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • ½ cup parmesan cheese
  • ½ cup mozzarella cheese
  • 2 garlic cloves finely minced
  • ¼ teaspoon red crushed pepper flakes optional
  • 1 tablespoon oil or more if needed
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375 degrees F.
  • In a large skillet over medium heat, sauté the garlic until fragrant. This should take about 15 seconds. 
  • Add the spinach and cook until wilted, about 2-3 minutes for fresh spinach, or 5-7 minutes for frozen spinach. Drain any excess liquid from the skillet.
  • In a mixing bowl, combine the cream cheese, sour cream, parmesan cheese, and mozzarella cheese.
  • Add the sautéed spinach and garlic to the mixing bowl and mix until well combined.
  • Season with salt, pepper, and red pepper flakes (if desired) to taste.
  • Transfer the mixture to an 8x8-inch baking dish or a cast iron skillet.
  • Bake for 20-25 minutes, or until the dip is hot and bubbly and the cheese is melted and golden brown on top.
  • Serve the dip hot with your favorite keto-friendly crackers, veggies, or pork rinds.

Notes

Make sure to discard any liquid the spinach releases while it cooks otherwise your spinach dip may turn out bland and watery.
