Double Chocolate Brownie Cookies

The ultimate chocolate cookies decorated with festive sprinkles.

Ingredients
  

  • 1 cup light brown sugar
  • 1 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Chocolate Dip

  • 6 oz chocolate bark
  • 1/4 cup sprinkles of choice

Instructions
 

  • Preheat oven to 375 degrees.
  • In a large bowl, mix the brown sugar and butter until it’s fluffy. Mix in the egg whites
    and vanilla extract.
  • Add in the flour, cocoa powder, baking soda and salt, and mix until well combined.
    Stir in the chocolate chips.
  • Using a larger cookie scoop, or tablespoon, scoop balls about 1 1/2 tbsp
    in size.
  • Roll the dough into a ball and place about 2 inches apart on a cookie sheet. Top with
    extra chocolate chips for appearance (optional).
  • Bake for 8-10 minutes. Cool for a few minutes and then move to a sheet of wax
    paper until the cookies are set.
  • If you choose to dip the cookies, wait for the cookies to completely cool before
    dipping. Melt the chocolate using a double broiler method, or in the microwave in 20-second intervals. Decorate with sprinkles while the chocolate dip is still warm.
